On a sweltering August day when the city heat makes people crave nothing so much as the cooling effects of a sweet, melting ice cream cone, it may seem as though one scoop is as good as another. But that's not the case, as any true ice cream aficionado will tell you.
At Les Givres, a new artisanal ice cream parlour/storefront, the proof is in the pudding -or rather, in the cones, as three young entrepreneurs are redefining the ice cream business based on quality, not quantity. What's more, Julien Lebuis (24), Alexandre Deslauriers (35) and Martin Maheux-Picard (36) are doing it on a year-round basis: If you question the need for ice cream in February, you'll change your mind after one taste of their signature maple-taffy satisfies seasonal urges toward sugar-shack visits.
Les Givres opened last May with a small-scale factory on Chabot St. and a year-round store on St. Denis St. at the cornerof RoySt. E., inasemi-basement that was formerly a takeout sushi joint. The pretty, well-lit space, equipped with an espresso bar and old-fashioned blender for shakes, is a lively gathering spot for kids and grown-ups to eat sundaes, cones, soft-serve and Hawaiian-style shaved ice on the spot. They also sell 500ml hand-packed tubs of hard ice cream as well as French patisseries and cake.
